I grew up watching my parents run their own restaurant, so it was natural for me to want to continue the tradition. I guess you could say it was in my blood. For some reason, that’s not where my life led me. I spent most of my young adult years in the Biotech industry and was working in biopharmaceutical development before my long-lost dream caught up with me.
About five years ago, I decided to make that dream come true. My vision was to make the best charbroiled chicken anywhere. My passion, combined with my science background, led me to Peru. I knew it would take research to accomplish my goal, so I packed up my bags and moved there for a season.
I lived in a small town close to Machu Picchu, which is set high in the mountains in the southern part of the country. It was not difficult to make friends there, and I found one who offered to take me on as an apprentice and teach me the authentic Peruvian methods of cooking with lump charcoal and the traditional seasonings. I spent months perfecting my own recipe and tracking down a source for the 16 herbs and spices that contribute to the magic of this chicken. The chicken takes a full three days to prepare and season. Then it is slow cooked over real wood lump charcoal. Finally, it was time to find a place where I could make my restaurant dreams come true. I found a fantastic place in Arlington, VA, and the deal was almost final when a friend told me to wait. He said he knew a perfect location in Damascus, MD. He said it was a small town with an active community, and thought my restaurant would be a welcome addition. So, here we are, and what great support we’ve had from the time I put my sign up! First wash the chicken wings, drain and pat dry.
Cut the chicken wings into 3 sections.

Next, prepare the sauce to marinade the chicken wings.
Stir the sauce ingredients together in a large bowl.

To prepare the grill, first place charcoal briquettes in the CENTRE of the grill.

Put the lid on and grill chicken wings on one side for about 25 minutes.
After 25 minutes or so remove the lid. Turn the chicken wings around
Pour honey in a bowl. This is used to brush the top of grilled chicken wings when ABOUT cooked.
Brush the chicken wings with the honey.
Cover and continue to grill for another 25 minutes or until juices turn clear, stirring occasionally.

Transfer the hot grilled chicken wings from the grilling grate to a plate.
